Tuna Mousse or Spuma Di Tonno

Ingredients

  • 1 can tuna packed in olive oil
  • 4 tsp. mayo
  • 1 T half and half
  • 2 tsp. balsamic vinegar
  • 2 tsp. soy sauce
  • 2 tsp. fresh lemon juice
  • Sea salt and fresh ground black pepper to taste

Directions

  1. Spoon the tuna into a food processor and give it several quick pulses, just to loosen it up.
  2. Add the mayo, or butter, along with the half and half, or cream, vinegar, and soy sauce, then process until the mixture is smooth.
  3. If anything is clinging to the bowl, stop and scrape it down. Add the lemon juice and pulse again briefly.
  4. Taste before you salt, then add salt and pepper however you like.
  5. Serve the mousse at room temperature with crackers, toasted pita chips, or crudites.
