Tuna and Tomato Salad with Sunflower Seeds

Ingredients

  • 1 can tuna, drained very well
  • 8 cups romaine lettuce
  • 3 small tomatoes or a handful of cherry tomatoes, diced in medium sized pieces
  • 1 T capers, chopped
  • 2 T thinly sliced green onions
  • 1/2 cup sunflower seeds
  • 1/4 cup your favorite Ranch dressing
  • 1/4 cup your favorite Vinaigrette dressing

Directions

  1. Set the tuna in a small strainer to drain thoroughly while you get everything else ready.
  2. Tear the lettuce into bite-size pieces, rinse it well, and dry it in a salad spinner, or use paper towels if that’s what you have.
  3. Dice the tomatoes, chop the capers, and slice the green onions thinly.
  4. Stir the ranch and vinaigrette together.
  5. Transfer the drained tuna to a small bowl. Add about 3 tablespoons of the dressing and stir it through, then fold in the capers and green onions.
  6. Place the clean, dry lettuce in a large salad bowl. Toss it with just enough dressing to lightly coat the leaves; you may not use every bit.
  7. Add the tuna mixture to the bowl and toss it with the lettuce.
  8. Scatter the tomatoes and sunflower seeds over the salad, then serve.
