Ingredients
- 12 oz bow tie pasta
- 5 oz can chunk light tuna in water
- 1 medium lemon, juiced
- 1/2 cup diced onion
- 1/2 tsp salt
- To taste fresh ground black pepper
- 3/4 cup light mayonnaise
- 2 cups frozen sweet peas
Directions
- Set 2 cups of peas on the counter to thaw. Prepare the bow tie pasta as directed on the package, boiling it for 5-7 minutes. Pour it into a colander to drain, then leave it to cool.
- While the pasta drains and cools, mix together the peas, tuna, mayonnaise, lemon juice, onions, salt and pepper. Taste the mixture and tweak the lemon juice, salt and pepper as needed.
- If the pasta is still warm once the tuna mixture is ready, rinse it under cold water until cooled. Drain it very well, then fold it into the pea and mayo mixture until every piece is nicely coated. Chill until you’re ready to serve.
