Prep 10 min · Makes about 2 cups

Ingredients
- 2 medium or 3 small ripe avocados
- 1-2 green onions, very thinly sliced
- 3 T fresh-squeezed lemon juice
- 1 cup buttermilk
- 1 tsp. celery salt, or more
- 2 tsp. Green Tabasco sauce
- 1/2 tsp. ground cumin
Directions
- Halve the avocados, take out the pits, and spoon the flesh into a food processor fitted with the metal blade.
- Add the sliced scallions and lemon juice, then blend until the scallions are minced small and everything is evenly mixed.
- Pour in the buttermilk, then add the celery salt, Green Tabasco Sauce, and ground cumin. Process again until the sauce is completely smooth.
- Taste, then adjust with extra Green Tabasco or celery salt if you think it needs a little more punch.
- Use it immediately, or refrigerate it for a few hours before serving.
- Any leftover Avocado Sauce or Dip will keep for several days in the refrigerator.
