Ingredients
- 3-4 zucchini, 8-10 inches long
- 1 tsp. Spike Seasoning
- 1 tsp. Italian Herb Blend
- About 3/4 lb. grated mozzarella
- About 20 slices pepperoni, cut in half
Directions
- Heat the broiler, and set the oven rack in the center position or about 4 inches from the heat source. Rinse the zucchini and trim away the ends.
- Slice the zucchini into rounds about 3/8 inches thick, using a mandoline if you have one. Try to keep the slices as even as possible so they cook at the same pace.
- Coat a large baking sheet with non-stick spray. Arrange the zucchini rounds across the pan, fitting them in tightly so the surface is fully covered.
- Season each piece of zucchini with Spike Seasoning and Italian Herb Blend, or the seasoned salt and spices you are using. Scatter the grated cheese over the zucchini so the tops are completely covered.
- Broil until the cheese has begun to soften and melt, about 3 minutes. While that happens, cut the pepperoni slices in half.
- Sprinkle the halved pepperoni over the partly melted cheese. Return the pan to the broiler for about 3-4 minutes more, until the pepperoni is lightly crisp and the cheese is beginning to brown. Serve right away.
