Vegan Strawberry Ice Cream
A dairy-free strawberry ice cream brightened with lemon and churned from rice milk for a fruity, refreshing scoop.

Ingredients
- Sugar
- Lemon juice
- Milk
- Honey
- Lemon
- Juice
- Cream
Directions
- Cut the berries into slices, then combine them with the sugar (or agave) and honey. Leave them at room temperature for 1 hour, until they have softened and released their juices.
- Blend the berries and all of their liquid with the rice milk, lemon juice and liquor, if using, using either a standard blender or an immersion blender. For a smooth texture, puree fully and press the mixture through a mesh sieve to remove some or all of the seeds. For a fruitier texture, stop while it is still a little chunky and skip straining.
- Taste the mixture, then add more lemon juice or liquor if you want a brighter or softer finish.
- Chill the mixture well, then churn it in your ice cream maker according to the manufacturer's directions. You can use up to 3 tablespoons of liquor in this ice cream; alcohol keeps the texture softer, so adding more will make the finished ice cream freeze less firmly. More tips are in the links below.
