Ingredients
- 1 Tbsp olive oil
- 1 yellow onion
- 4 cloves garlic
- 1/2 lb. ground turkey
- 3 15 oz. cans black beans
- 1 can diced tomatoes with green chiles
- 3 oz. tomato paste
- 1 Tbsp chili powder
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp oregano
- 1/4 tsp salt, or to taste
Directions
- Chop the onion into dice, and finely mince the garlic. Pour 1 Tbsp olive oil into a large pot, add the onion and garlic, and cook over medium-low heat until they have softened, 2-3 minutes.
- Add the ground turkey to the pot and keep sautéing until no pink remains, 5-7 minutes. As it cooks, use your spoon to nudge and break it into small crumbles.
- Stir in the 3 cans of beans, undrained, along with the diced tomatoes, undrained, tomato paste, chili powder, cumin, smoked paprika, and oregano. Mix until everything is evenly combined.
- Let the chili bubble gently for about 10 minutes, so the flavors can come together and the liquid can thicken a bit. Taste, then season with salt as needed, depending on your canned goods; about 1/4 tsp may do it. Serve with your favorite chili toppings.
