Zucchini Pizza Boats

Ingredients

  • 6 small zucchini
  • 1 Tbsp olive oil
  • 1 clove garlic, finely minced
  • Salt and freshly ground black pepper
  • 1 cup marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/3 cup finely shredded parmesan cheese
  • 1/2 cup mini pepperoni slices
  • 2 Tbsp chopped fresh oregano

Directions

  1. Set your oven to 400 degrees. Cover a large rimmed baking sheet with parchment paper or a silicone baking mat and keep it nearby.
  2. Slice each zucchini in half lengthwise. If any half will not sit steady, trim a thin sliver from the bottom so it rests mostly flat. Blot the cut sides with paper towels, then arrange the zucchini on the prepared baking sheet.
  3. In a bowl, mix together the olive oil and garlic, then brush it lightly over the tops of the zucchini. Add salt and pepper to taste, then spread a slightly heaping 1 Tbsp marinara sauce over each zucchini, leaving a small bare edge all the way around.
  4. Scatter the mozzarella evenly over the zucchini, then add the parmesan. Place the pepperoni slices on top, keeping them closer to the centers since the cheese will melt and spread. Bake in the 400 degree oven for 12 – 18 minutes, depending on the thickness of your zucchini and the texture you want.
  5. Take the pan out of the oven and finish the zucchini with the chopped fresh oregano. Serve warm.
