Zucchini Sausage Ravioli

Ingredients

  • 20 oz. bag frozen cheese ravioli
  • 1 Tbsp olive oil
  • 8 oz. Italian Sausage
  • 2 lb. zucchini
  • 24 oz. jar pasta sauce

Directions

  1. Prepare the ravioli in a large pot following the package directions, then drain it in a colander.
  2. Return that same pot to the stove and add the olive oil, followed by the Italian sausage. If your sausage has a casing, press the meat out of it and into the pot. Cook over medium heat until the sausage is browned and crisp at the edges, crumbling it into small bits as it cooks. Pour off any extra grease if necessary.
  3. As the sausage cooks, cut the zucchini into half-moon slices. When the sausage is browned and any excess grease has been removed, stir in the zucchini. Cook for about 5 minutes longer, until the zucchini has softened slightly but still has some texture.
  4. Stir in the pasta sauce and let it warm for a few more minutes. Add the drained ravioli, toss gently until everything is covered in sauce, and serve hot.
