5 Minute Nacho Cheese Sauce

Ingredients

  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 cup whole milk
  • 6 oz. medium cheddar, shredded
  • 1/4 tsp salt
  • 1/4 tsp chili powder

Directions

  1. Put the butter and flour in a small sauce pot. Set it over heat and whisk until the mixture turns foamy and starts to bubble, then keep whisking and cooking for about 60 seconds.
  2. Pour in the milk while whisking it into the butter-flour mixture. Raise the heat a little and keep whisking as the milk comes up to a simmer. As soon as it simmers, it will begin to thicken; when it can coat the back of a spoon, take the pot off the heat.
  3. Add the shredded cheddar by the handful, stirring after each addition until it melts smoothly into the sauce. If the cheese needs a little encouragement, return the pot to low heat briefly. Be careful not to let the sauce get too hot.
  4. When the cheese has fully melted, stir in the salt and chili powder. Taste, then adjust the seasoning if it needs it. If the sauce tightens up too much, whisk in a splash of milk to loosen it.
