Bavarian Sausage with Warm Potato and Kale Salad

Ingredients

  • 1 lb Bavarian sausage
  • 2 lbs potatoes, peeled and cubed
  • 1/4 cup olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups kale, chopped
  • 1/4 cup white wine vinegar
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste

Directions

  1. Set a large pot with a steamer insert over high heat and bring an inch of water to a boil. Add the potatoes to the basket, cover the pot snugly, lower the heat to medium, and steam until the potatoes are tender, 20 to 25 minutes.
  2. As the potatoes cook, prepare the sausages on the grill or in a skillet, following the package directions.
  3. Save the pot, then drain the potatoes and slice them crosswise into bite-size pieces. Move the potatoes into a large bowl.
  4. Using the same pot, stir together the broth, vinegar, mustard, sugar, and caraway. Bring the mixture to a boil over high heat, take it off the burner, and whisk in the oil gradually. Pour the warm dressing over the potatoes, then add the kale and onion. Season well with salt and pepper, and fold everything together gently with a silicone spatula. Allow it to sit for a few minutes so the flavors can come together. Serve the warm salad alongside the sausages.
