Berry Peach Shrub Mocktail
A bright fruit-and-vinegar sparkler with berries, peach, lemon, and bubbles for a tart, refreshing sip.

Ingredients
- 1 cup chopped fresh strawberries
- 1/2 cup chopped ripe peach
- 1/2 cup granulated sugar
- 1/4 teaspoon kosher salt
- 1/2 cup apple cider vinegar
- 1/4 cup fresh lemon juice
- Ice
- 3 cups chilled sparkling water
- Fresh mint or basil, for garnish
Directions
- Combine the strawberries, peach, sugar, and salt in a bowl or jar. Mash gently with a fork until the fruit releases plenty of juice, then cover and refrigerate for at least 4 hours or overnight.
- Stir in the apple cider vinegar and lemon juice until the sugar dissolves. Strain through a fine-mesh sieve, pressing lightly on the fruit, and chill the shrub syrup until cold.
- For each drink, fill a glass with ice and add 2 to 3 tablespoons of the shrub syrup. Top with chilled sparkling water, stir gently, and garnish with mint or basil. Store any extra syrup covered in the refrigerator for up to 1 week.
