Ingredients
- 1 pound of raw "green" peanuts
- 1/4 cup kosher salt
- 4 cups water
- 2 tablespoons Old Bay Seasoning, smoked paprika, shrimp boil mix, or even star anise
Directions
- Rinse the raw, unshelled peanuts very well under water.
- Add the water, salt, seasoning, and peanuts to a large stockpot. Set it over heat and bring everything to a gentle boil, then put on the lid and lower the heat only enough to keep that soft boil going.
- Cook for 2 to 3 hours, or longer if you want them softer, until the peanuts have the texture you like. Some cooks let them go all day, so this is not a fussy little snack.
- Drain the peanuts. Eat them within a couple of days, since boiled peanuts do not keep as nicely as dry peanuts.
