Ingredients
- 3 pounds garnet sweet potatoes, peeled and cut into 1 inch chunks
- Salt
- 3 to 4 Tbsp of bourbon whisky
- 4 Tbsp butter
- 4 Tbsp brown sugar
- 2 teaspoons vanilla extract
Directions
- Put the sweet potato chunks into a large 5 quart pot and add enough water to cover them. Stir a tablespoon of salt into the water, then bring it to a boil. Cook the sweet potatoes until they are tender, about 15 to 20 minutes.
- Drain the sweet potatoes, then put them back into the same pot on the stove. Turn the heat down to low.
- Add the bourbon and butter to the pot, and stir them into the sweet potatoes. Stir in the brown sugar and vanilla extract.
- Use a potato masher to mash everything until smooth. Taste, then adjust with more salt, bourbon, butter, and brown sugar as needed.
