Braised Beef Neck Bones

Ingredients

  • 2 pounds beef neck bones
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 1 can diced tomatoes with juice
  • 1/2 cup red wine
  • 2 cups beef broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Directions

  1. Set your oven to 350 degrees F (175 degrees C).
  2. In a large bowl, sprinkle the beef neck bones with salt and pepper to taste. Add the thyme, bay leaves, beef broth, red wine, the diced tomatoes, juice included, plus the celery, carrots, garlic and onion, then stir it all together well.
  3. Set a large Dutch oven over medium-high heat and warm the olive oil. Nestle in the beef neck bones, letting each side take on good color, about 5 minutes per side. Pour the mixture from the bowl over the beef and bring it to a boil. Put the lid on, then move the Dutch oven into the hot oven.
  4. Keep it in the oven for 2 hours, or until the meat is fully cooked and tender. Serve it hot with the side dishes you like best.
