Brussels Sprouts with Chinese Sausage
Brussels sprouts stir-fried in rendered Chinese sausage fat with fish sauce make a savory, salty side with crisp-tender bite.

Ingredients
- Salt
- Water
- Fish sauce
- Half
- Brussels sprouts
Directions
- Put the Chinese Sausage in a wok or large sauté pan, then set the heat to medium low. Cook it slowly for 5 minutes, keeping an eye on the pan so the sausage does not scorch. Push the Chinese Sausage onto the sloped sides of the wok so the rendered fat can run back down into the bottom. With a slotted spoon, transfer the Chinese Sausage to a plate and leave the fat behind in the pan.
- Raise the heat to medium-high and add the brussels sprouts. Toss them through the fat until they are coated, then stir fry for 2 minutes. Pour in 1 tablespoon of water and toss again. Cook the brussels sprouts for 2 minutes. If the brussels sprouts are cut in half rather than shredded, use 3 tablespoons water instead, lower the heat to medium, cover the pan, cook for 5 minutes, and test to see if they are done.
- Add the fish sauce, then return the cooked Chinese Sausage to the pan and toss everything together. Taste before adding more fish sauce, making sure the bite includes both brussels sprouts and Chinese Sausage, since the sausage brings plenty of salt.
