Caribbean Pork and Plantain Hash
Savory pork and sweet plantains cook into a quick skillet hash with peppers, thyme, soy sauce, hot sauce, and fresh cilantro.

Ingredients

Directions
In a bowl, mix the soy sauce, 1/4 teaspoon salt, thyme, and the next 4 ingredients, from thyme through pork, then toss until everything is evenly coated. Warm 1 1/2 teaspoons oil in a large nonstick skillet set over medium-high heat. Add the pork mixture and sauté for 4 minutes, or until the pork is cooked through. Transfer it out of the skillet and keep it warm. Add the remaining 1 tablespoon oil and the butter to the same pan. Stir in the onion, bell pepper, plantains, 1/2 teaspoon salt, and black pepper, and cook for 6 minutes, stirring now and then. Add the garlic and sauté for 2 minutes more, until the plantains are tender. Finish with a drizzle of hot sauce, stir to combine, and scatter cilantro over the top.
