Cheesy Potato Frittata

Ingredients

  • 6 large potatoes, peeled and diced
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 eggs, beaten
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter or margarine
  • 2 tablespoons olive oil

Directions

  1. Set the oven for 350 degrees F (175 degrees C). Rub butter or margarine over a 9-inch pie plate to grease it.
  2. Warm the olive oil in a large skillet set over medium heat. Toss in the garlic and onion, then cook, stirring, until they soften, about 5 minutes. Add the potatoes and keep cooking and stirring until they pick up a little color, about 10 minutes.
  3. Grab a large bowl and whisk the eggs with the salt and pepper. Fold in the cheese and the potato mixture. Pour everything into the prepared pie plate. Scatter the remaining butter or margarine over the top in little dots.
  4. Bake in the hot oven for 25 to 30 minutes, until the center is set and the top is golden brown. Let it cool for 10 minutes before serving.
