Ingredients
- 1 1/4 pound red cherries, halved and pitted
- 1 pound jicama; peeled and cut into batons
- 1 small handful torn fresh basil leaves
- 4 ounces macadamia nuts, roughly crushed
- Zest of 1 lime plus fresh lime juice to taste
- Extra-virgin olive oil, for drizzling
- Kosher salt
Directions
- Place the cherries, jicama, basil, and macadamia nuts in a large bowl, either for mixing or serving. Sprinkle in the lime zest, then add a drizzle of olive oil, using only enough to give everything a light coating. Toss until evenly combined.
- Squeeze in lime juice to your taste, aiming for enough tartness to balance the sweet cherries and rich oil, and toss again. Season with salt, then serve.
