Ingredients
- 2 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 stick unsalted butter, at room temperature
- 1 cup dark brown sugar
- 1 teaspoon vanilla extract
- 1 egg
- 3/4 cup Grade B maple syrup
Directions
- Whisk the flour, baking soda, ginger, cinnamon, and salt in a medium bowl. In a large bowl, beat the butter with the sugar until the mixture looks pale and airy, about 4 minutes.
- Mix in the vanilla and egg until everything is fully blended. Pour in the maple syrup and beat again until combined.
- Add the flour mixture to the wet ingredients in 2 additions, stirring each time only until it disappears into the dough. Cover the bowl with plastic wrap and chill for 1 hour.
- Heat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
- Scoop the dough by the tablespoon onto the prepared baking sheets, spacing the cookies 3 inches apart. Bake until the edges turn golden, about 10 minutes. Cool the cookies on the sheets for 10 minutes, then transfer them to a cooling rack.
