Chili Rubbed Pulled Pork
Chili-spiced pork butt turns tender in the slow cooker, then shreds into smoky, gently spicy meat for easy dinners.

Ingredients
- 2.5-3 lb boneless pork butt
- 2 Tbsp chili powder*
- 1 Tbsp smoked paprika
- 1/4 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp salt
- Freshly cracked pepper
Directions
- Slice the pork butt into cubes about 2-3 inches wide, then transfer them to a large bowl.
- In a separate bowl, combine the salt, chili powder, smoked paprika, cayenne pepper, garlic powder, onion powder, and a few cracks of pepper. Sprinkle the seasoning over the pork and toss until the pieces are evenly coated.
- Move the seasoned pork into a slow cooker. Set it to high and cook for 4 hours.
- Carefully lift the meat out of the cooking juices and place it in a large bowl or dish. Shred it with 2 forks, pulling out any big bits of fat or gristle as you go. Serve right away, or divide into portions and refrigerate or freeze for later.
