Chipotle Portobello Oven Fajitas

Ingredients

  • 1 Tbsp chili powder
  • 1/2 tsp chipotle powder
  • 1/2 tsp onion powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1 tsp sugar
  • 1/2 tsp salt
  • 2 portobello mushroom caps
  • 2 bell peppers, any color
  • 2 yellow onions
  • 3 Tbsp olive oil
  • 8 small flour tortillas
  • 1 avocado
  • Handful cilantro, optional
  • 1 fresh lime

Directions

  1. Heat your oven to 400ºF. In a small bowl, combine the fajita spice mix ingredients. Cut the portobellos, bell peppers, and onions into strips about 1/4 inch wide.
  2. Transfer the cut vegetables to a large 9x13 inch casserole dish or a large baking sheet. Pour the olive oil over them, then scatter the fajita spice mix across the top. Toss with your hands until the vegetables are evenly covered with the oil and spices.
  3. Roast in the fully heated oven for 40 minutes, until the vegetables have softened a bit and the edges are nicely browned. Give everything a stir midway through roasting so the heat can reach the vegetables evenly.
  4. Once the vegetables are out of the oven, squeeze fresh lime juice over them. Scatter chopped cilantro on top. For each fajita, add a small scoop of the roasted vegetables to a tortilla and finish with a slice of avocado.
