Easy Oven Fajitas

Ingredients

  • 1 Tbsp chili powder
  • 1/2 Tbsp paprika
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp cumin
  • 1/8 tsp cayenne pepper
  • 1 tsp sugar
  • 1/2 tsp salt
  • 2 small or 1 large onion
  • 3 bell peppers, any color
  • 1 lb. chicken breast
  • 2 Tbsp vegetable oil
  • 1 medium lime
  • 8 6-inch tortillas
  • 1/2 cup sour cream, optional
  • 1/4 bunch cilantro, optional

Directions

  1. Set your oven to 400 degrees. In a small bowl, stir together the chili powder, paprika, onion powder, garlic powder, cumin, cayenne pepper, sugar, and salt, then keep that seasoning blend nearby.
  2. Slice the onion and bell peppers into strips that are 1/4-inch wide. Spread them into a large 13x15-inch casserole dish, or use a large baking sheet. Cut the chicken breast into very thin pieces, then add it right in with the vegetables.
  3. Pour the vegetable oil over the chicken and vegetables, and scatter the fajita seasoning across the pan. Get in there with your hands and toss until the oil and spices coat everything evenly. Bake at 400 degrees for 35-40 minutes, giving the mixture a stir halfway through. Once it comes out of the oven, squeeze the juice from half the lime over the meat and vegetables.
  4. As the fajita filling cooks, warm each tortilla in a dry skillet over medium-low heat until both sides have a little color. Add a small scoop of the chicken and vegetables to the middle of each tortilla. Finish with cilantro sprigs, sour cream, and another squeeze of lime, if you like.
