Ingredients
- 1/4 cup granulated sugar
- 1/4 cup corn starch
- 1/2 teaspoon salt
- 2 1/2 cups whole milk
- 4 large egg yolks
- 2 tablespoons unsalted butter, cut into 1/2" pieces
- 1 teaspoon vanilla extract
- 2 oz high-quality milk chocolate
- 2 oz high-quality dark chocolate
- 1 tablespoon Dutch-process cocoa powder, optional
Directions
- Add the milk chocolate to one medium bowl and the dark chocolate to another. If you’re using the cocoa powder, stir it with a little hot water until it becomes a loose paste, then scrape it into the dark chocolate bowl. Leave both bowls nearby.
- In a medium saucepan, whisk together the sugar, cornstarch, and salt. Add the milk gradually, just a few tablespoons at a time at first, whisking well so the cornstarch fully dissolves and any lumps disappear. Whisk in the egg yolks.
- Set the pan over medium-high heat and cook, whisking the whole time, until the pudding thickens and you see bubbles forming and popping, about 6 minutes. Turn the heat down to low and keep whisking as it cooks for 1 minute more.
- Take the pan off the heat, then whisk in the butter and vanilla. Pour the pudding through a strainer, splitting it evenly between the 2 bowls of chocolate. Whisk each bowl right away so the chocolate melts smoothly into the pudding.
- Spoon the milk chocolate pudding into individual serving cups, or move it into a large serving bowl. Add the dark chocolate pudding over the top. Place plastic wrap directly against the pudding’s surface, then chill for at least 1 hour.
