Ingredients
- 1/2 cup packed light-brown sugar
- 1/2 cup granulated sugar
- 2 1/2 tsp Siagon cinnamon
- 3/4 tsp fine sea salt
- 4 cups Fisher Whole Almonds
- 1 large egg white
- 2 tsp water
- 2 tsp vanilla extract
Directions
- Set the oven to 250 degrees Fahrenheit. Prepare a rimmed baking sheet, 18 by 13-inch, by covering it with parchment paper or a silicone baking mat. Stir the brown sugar, granulated sugar, cinnamon and salt together in a medium bowl, then put that bowl aside.
- Add the almonds to a large bowl. In a small bowl, whisk the egg white with the water and vanilla until the mixture looks foamy. Drizzle it over the almonds and toss until they are coated all over.
- Sprinkle the sugar mixture over the almonds and toss again so the coating is distributed evenly. Transfer the almonds to the prepared baking sheet and spread them out into a level layer.
- Bake in the heated oven for 60 minutes total, stirring the almonds every 15 minutes, three times during baking. Cool completely, then keep in an airtight container for up to one week.
