Ingredients
- 2 cups fresh cranberries
- 2 pears, peeled, cored and diced
- 1/2 cup sugar
- 1/4 cup orange juice
- 2 tablespoons lemon juice
- 1 teaspoon grated orange zest
- 1/4 teaspoon ground cinnamon
- Pinch of ground cloves
Directions
- Add the onion, sugar, wine, ginger, lemon peel, and salt to a medium saucepan. Set it over high heat and bring the mixture to a boil, stirring so the sugar melts into the liquid. Lower the heat until it bubbles gently, then cook at a simmer for 15 minutes.
- Add the cranberries and pears, then continue simmering until the cranberries and onion are tender, about 20 minutes. The mixture will deepen into a rich scarlet sauce.
- Take out the lemon peel and discard it. Cool the relish to room temperature before serving. Transfer any leftovers to an airtight container and refrigerate for up to 2 weeks.
