Cranberry Shrub Mocktail
A tart cranberry-orange shrub topped with ginger beer for a bright, spiced drink with a cozy maple finish.

Ingredients
- 1 cup fresh or frozen cranberries
- 3/4 cup water
- 1/2 cup granulated sugar
- 2 tablespoons maple syrup
- 2 wide strips orange zest
- 1/4 teaspoon ground allspice
- 1/3 cup apple cider vinegar
- 2 tablespoons cranberry shrub, per drink
- 1 tablespoon fresh orange juice, per drink
- 1 teaspoon maple syrup, optional per drink
- Ice
- 4 ounces chilled non-alcoholic ginger beer, per drink
- Orange twist, for garnish
- Fresh cranberries, for garnish
Directions
- Combine the cranberries, water, sugar, maple syrup, orange zest, and allspice in a medium saucepan. Bring to a simmer over medium heat, stirring until the sugar dissolves, then cook until the cranberries have burst and softened, about eight minutes.
- Take the pan off the heat and strain the mixture through a fine mesh sieve into a bowl. Press gently to get the syrup without pushing too many solids through. Stir in the apple cider vinegar, then let the shrub cool and refrigerate until cold.
- To make each drink, fill a glass with ice. Add the cranberry shrub, orange juice, and maple syrup if using, then stir well.
- Top with chilled non-alcoholic ginger beer and give it one gentle stir. Garnish with an orange twist and a few cranberries.
