Cream Cheese Cookies

Ingredients

  • 8 tablespoons unsalted butter, at room temperature
  • 3 ounces cream cheese, softened
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt

Directions

  1. Set your oven to 350 degrees F. With a stand mixer or hand beaters, beat the butter, cream cheese and sugar together until the mixture looks pale and airy, 3 to 5 minutes. Add the flour and salt, and mix only until they disappear into the dough. Run a spatula around the bowl, then stir once or twice with a spoon so there are no sneaky unmixed pockets.
  2. Scoop the batter in tablespoonfuls onto parchment-lined baking sheets, keeping about 1 1/2 inches of space between the cookies because they will spread a bit. Bake for about 12 minutes, stopping when the edges have turned golden brown. Do not let them go too far, or you lose that chewy middle. Let the cookies cool a little on the baking sheet, then slide them off with a spatula and transfer them to a rack to finish cooling.
