Creamy Lemon Poppy Seed Dressing

Ingredients

  • 2 1/2 ounces Fresh Lemon Syrup
  • 1 3/4 ounces safflower oil, pistachio oil, or whatever salad oil you prefer
  • 1 ounce cultured lowfat buttermilk
  • 1 ounce lemon juice, from 1 small lemon
  • 3/4 teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume or use the same weight
  • 1 1/2 teaspoons poppy seeds, or more to taste
  • Freshly cracked black pepper

Directions

Add the Fresh Lemon Syrup to a small jar, squeeze bottle, or little pitcher, followed by the oil, buttermilk, lemon juice, salt, poppy seeds, and black pepper. Mix thoroughly, or seal the container and shake until the dressing looks smooth and blended. Taste and tweak the seasoning as needed, then use it right away on salad or stash it in an airtight container in the refrigerator for up to 1 month.
