Ingredients
- 1 ounce dried lemon drop chile peppers, stems and seeds removed
- 1 teaspoon coriander seeds
- 1/4 teaspoon cumin seeds
- 4 cloves garlic, peeled
- 1 cup apple cider vinegar
- 1/4 cup fruity extra virgin olive oil
- Honey, to taste
- Salt, to taste
Directions
- Warm a skillet over medium heat, then add the chiles, coriander, and cumin. Let them toast for about 10 seconds, just until you can smell them, then take the skillet off the heat. Tip the toasted mixture into a blender with the garlic, vinegar, and olive oil. Blend until the sauce is very smooth, pausing to scrape down the blender as needed, 3-5 minutes.
- Set a fine-meshed strainer over a bowl and pour the hot sauce into it. Use a rubber spatula to press the sauce through, separating the liquid from the pepper and spice pieces. Stir in honey and salt to taste, beginning with about 1/4 teaspoon, then pour the sauce into a very clean bottle or jar. Keep the sauce in the refrigerator.
