Crockpot Lentil Soup with Sausage and Spinach

Ingredients

  • Onion
  • Carrot

Directions

  1. Set a large skillet over medium heat, then cook the sausage, stirring as needed, until it has taken on good color and is fully cooked. Lift it out of the pan and reserve it for later.
  2. Use that same pan for the carrots and onion, cooking them until they begin to soften, about 5 minutes. Stir in the garlic and let it cook briefly, just until fragrant.
  3. Spoon the sautéed vegetables into a 6-quart slow cooker. Add the lentils, browned sausage, spinach, and 4 cups water or broth, or use some of each, then stir everything together.
  4. Put the lid on and cook until the lentils are tender, either on low for 8 hours or on high for 4 hours. Serve warm with crusty bread or crackers, if you like.
