Prep 15 min · Makes 2 servings (or 4 side salads)

Ingredients
- 1 large handful chopped romaine lettuce
- 1 large handful chopped arugula or spinach
- 1 cup celery, sliced in 1/2 inch slices
- 1 cup radishes, cut in fourths lengthwise
- 2/3 cup carrots, cut in 1/2 inch slices
- 2 small cucumbers, cut in fourths, then sliced in 1/2 inch pieces
- 3-4 T your favorite blue cheese salad dressing
- Crumbled Gorgonzola cheese, about 1 T for each salad
- Fresh ground pepper to taste
Directions
- Cut up the arugula and romaine, then rinse them and dry them in a salad spinner. If you are washing by hand, blot the greens dry with paper towels. Prep the radishes, celery, carrots, and cucumbers, if you are using them.
- Add the romaine, arugula, cucumbers, celery, radishes, and carrots to a large bowl. Drizzle in the blue cheese dressing and toss until everything is evenly coated.
- Divide the salad between 2 plates, or use 4 small plates if you are making side salads. Scatter the Gorgonzola on top, then finish with pepper.
