Ingredients
- 1 cup plain yogurt
- 1/2 medium cucumber
- 1/2 inch fresh ginger
- 1/4 tsp coriander
- 1/4 tsp cumin
- 1/4 tsp salt
- Handful fresh cilantro or mint
Directions
- Peel the cucumber, then cut it in half from end to end. Scrape out the seeds with a spoon. Shred the cucumber on the large holes of a cheese grater, transfer it to a colander, sprinkle with a pinch of salt, and leave it there while you mix the sauce.
- In a small bowl, stir together the yogurt, salt, cumin, and coriander. Coarsely chop the cilantro and add it to the bowl. Peel the ginger, then grate it into the bowl with a fine cheese grater.
- Once the cucumber has rested for at least 10 minutes, push it against the colander to squeeze out as much liquid as you can. Stir the drained cucumber into the yogurt mixture. Serve right away, or chill it so the flavors can settle together. Taste and add more salt if needed.
