Curried Peanut Spread
A creamy peanut spread with Thai red curry, coconut milk powder, brown sugar and vinegar for a sweet, tangy, gently spicy pantry snack.
Prep 5 min · Cook 1 min · Total 6 min · Makes about 1 1/2 cups

Ingredients
- 3/4 cup natural peanut butter, creamy
- 1/3 cup dark or light brown sugar, packed
- 2 teaspoons Thai red curry paste, or to taste
- 1/3 cup coconut milk powder
- 1 tablespoon white or apple cider vinegar
- 3/4 teaspoon kosher salt
Directions
- Add all of the ingredients to a medium microwave-safe mixing bowl, then whisk until the mixture looks evenly combined.
- Heat it in the microwave on high for 1 minute. Take a look to make sure the coconut milk powder has melted into the mixture; the spread should be mostly smooth. If it still feels noticeably grainy, stir in 2 teaspoons of water and microwave it for 1 more minute.
- Taste and adjust the seasoning if needed. If the spread is thicker than you want, loosen it with warm water. Store it in an air-tight jar in the refrigerator for 2 weeks.
