Ingredients
- 6 tablespoons finely grated Parmigiano-Reggiano
- 4 ounces pancetta, finely diced
- 6 hard boiled or hard steamed eggs, peeled and halved lengthwise
- 2 tablespoons mayonnaise
- 1 teaspoon distilled white vinegar
- Kosher salt and freshly ground black pepper, plus coarsely cracked pepper, for garnish
- Minced parsley, for garnish
Directions
- Heat the oven to 300 degrees F, and cover a baking sheet with a silpat. Scatter 4 tablespoons Parmigiano-Reggiano into 2 separate 4-inch circles on the silpat; bake for about 10 minutes, until the cheese has melted and taken on a little color. Once the rounds have cooled into firm crisps, snap each one into 4 pieces.
- While that is happening, put the minced pancetta in a small skillet over medium-high heat. Cook it for about 5 minutes, until the pancetta is browned and crunchy and the fat has cooked out. Pour it through a strainer, keeping the fat, then move the pancetta to a paper-towel lined plate. You should end up with about 2 tablespoons of crisped pancetta and at least 1 tablespoon of rendered fat. Let everything cool slightly.
- Drop all the yolks into a medium bowl. Pick out the 8 nicest egg white halves and keep those for filling; save the remaining 4 for something else. Add 1 tablespoon crispy pancetta, 1 tablespoon rendered fat, mayonnaise, vinegar, and the remaining 2 tablespoons Parmigiano-Reggiano to the yolks. With a sturdy whisk, mash and stir until the filling is thoroughly combined. Season with salt, then go very generously with ground black pepper.
- Spoon the yolk filling into a zipper-lock bag. The filling and egg white halves can wait, covered, in the refrigerator up to overnight before you fill and serve; place the whites cut-side-down on a large plate and cover them with plastic wrap. Snip a corner from the zipper-lock bag and pipe the mixture into the egg white halves, mounding it generously into each cavity. Finish the deviled eggs with crispy pancetta, cracked black pepper, cheese crisps, and parsley. Serve immediately.
