Doritos Mac and Cheese Balls

Ingredients

  • 1/2 cup uncooked macaroni
  • 1/4 cup butter
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups milk
  • 2 cups shredded cheddar cheese, divided
  • 1 can diced tomatoes with green chilies, drained
  • 1 bag Doritos, crushed and divided
  • 1/4 cup grated Parmesan cheese

Directions

  1. Set the oven to 350 degrees F (175 degrees C), then lightly grease a baking sheet.
  2. Combine the Parmesan cheese with 1/2 of the crushed Doritos in a medium bowl, and put that mixture aside for later.
  3. Place the tomatoes, 1 cup cheddar cheese, milk, pepper, salt and flour in a large saucepan set over medium heat. Stir constantly as it cooks, until the sauce becomes thick and begins to bubble. Take the pan off the heat, add the butter, and stir until it has melted into the sauce. Fold in the macaroni and the rest of the Doritos, mixing until everything is evenly worked through.
  4. Drop generous tablespoons of the macaroni mixture onto the prepared baking sheet. Scatter the remaining cheddar over the top, followed by the Dorito-Parmesan mixture you set aside. Bake for 15 minutes, until the tops are golden brown. Serve warm.
