Ingredients
- 1 large egg
- 1/3 cup extra virgin olive oil
- 2/3 cup milk
- 1 1/2 cups tapioca flour
- 1/2 cup grated cheese, your preference, we get good results with feta cheese, or fresh farmer's cheese
- 1 teaspoon of salt, or more to taste
Directions
- Heat your oven to 400 degrees F. Rub a small amount of olive oil inside each cup of a mini-muffin tin so the little breads can pop out easily later.
- Add all of the ingredients to a blender and pulse until the mixture is smooth. If the batter is clinging to the blender walls, stop and use a spatula to push it back down so everything blends evenly. If you want to pause here, the batter can go into the refrigerator for up to a week.
- Divide the batter among the prepared mini-muffin cups, stopping just shy of the rim and leaving about 1/8 inch at the top.
- Bake in the oven at 400 degrees F for 15-20 minutes, until the tops have puffed up and taken on a good golden color. Take the pan out of the oven and let the breads rest on a rack for a few minutes.
- Have them warm, or set them aside to reheat later. Brazilian cheese bread has a very chewy texture, a bit like Japanese mochi.
