Ingredients
- 2 slices of rye bread
- 2-3 Tbsp butter
- 3-4 slices leftover turkey
- 2-3 slices Monterey jack cheese
- 2-3 pieces of arugula, optional
- A handful of sweet pickled onions or another sweet pickle
Directions
- Warm a frying pan, ideally cast iron, over medium-high heat for 1-2 minutes. As it heats, build the sandwich with bread on the bottom, followed by the cheese, turkey, arugula, pickles, and the second slice of bread.
- Spread butter on the side nearest the cheese, then set the sandwich in the hot pan with that buttered side facing down.
- When the underside has turned golden, about 2-3 minutes, butter the upper slice and gently turn the sandwich over in the pan. Cook it for 1 minute more, then lower the heat as far as it will go and cover the pan. Once the cheese has melted, the sandwich is ready. Eat it right away.
