Ingredients
- 1 bag tortilla chips
- 1 Tbsp olive oil
- 1/2 cup tomato sauce
- 1 lb. lean ground beef
- 1 can diced mild green chilis
- 1 can black beans, drained and rinsed
- 1 pkg. low-sodium taco seasoning, such as Ortega, which has cornstarch to thicken
- 2 cups shredded cheddar cheese or monterey jack cheese
- 1 large avocado, diced, or sub guacamole
- 1/3 cup sour cream or crema Mexicana
- 1 1/2 cups pico de gallo, homemade, or fresh store-bought
Directions
- Heat the oven to 375 degrees. Arrange the tortilla chips across a baking sheet with a rim, 18 by 13-inch, making one even layer, then set the pan aside.
- Warm the olive oil in a non-stick 12-inch skillet over medium-high heat. Drop in the beef in chunks and cook for about 6 minutes, breaking it up and tossing it now and then, until it is cooked through. Drain off the fat.
- Stir the tomato sauce, black beans, green chiles, and taco seasoning into the beef. Spoon the mixture evenly over the chips, then scatter the cheeses over the ground beef layer.
- Bake until the cheese is melted, about 5 – 7 minutes. Top the nachos with pico de gallo and avocados. Add dollops of sour cream, or drizzle with crema, and serve immediately.
