Prep 20 min · Cook 1 hr · Total 1 hr 20 min · Makes 4 servings

Ingredients
- 2 large or 3 medium red-fleshed sweet potatoes, cut into pieces about 1 1/2 inches across
- 1 T + 1 tsp. olive oil
- 1 T Sweet Potato Fry Seasoning, see below
- 4 pre-cooked chicken sausages with garlic, cut into fourths
- 2 T ground coriander
- 1 T ground fennel
- 1 T dried oregano
- 1 T Aleppo Pepper
- 2 T kosher salt
Directions
- Heat the oven to 400F/200C. Coat a large baking sheet with non-stick spray or olive oil.
- Use a vegetable peeler to remove the skins from the sweet potatoes, then cut them into cubes about 1 1/2 inches across. In a bowl, toss the sweet potatoes with the olive oil and sweet potato fry seasoning, scattering the seasoning as you mix so the pieces are evenly coated.
- Spread the sweet potatoes out in one layer on the baking sheet. Roast them for 30 minutes, turning them once or twice if you can, so the edges color as evenly as possible.
- While the sweet potatoes are in the oven, slice each sausage into four pieces. After 30 minutes, either gather the sweet potatoes toward the center of the baking sheet or move them into a baking dish so they sit close together.
- Place the sausage pieces over the sweet potatoes and return the pan to the oven for 25-30 minutes more. If you can, turn the sausage once during that time so both sides get browned. Serve hot.
