Easy Sweet Chili Sauce
A tangy, spicy-sweet chili sauce thickened on the stovetop for spooning over vegetables, noodles, tofu, meat or seafood.

Ingredients
- 1/4 cup rice vinegar
- 1/4 cup sugar
- 1/4 cup water
- 1 Tbsp sambal oelek
- 1/2 Tbsp cornstarch + 1 Tbsp water
Directions
- Combine the rice vinegar, sugar, water, and sambal oelek in a small sauce pot. Set it over medium heat, stirring as it warms, until the sugar has completely dissolved.
- In a small separate dish, mix the cornstarch with 1 Tbsp water until smooth, then add that slurry to the sweet chili sauce in the pot. Keep cooking and stirring until the sauce reaches a simmer; the cornstarch will tighten it up, and the mixture will change from cloudy to clear.
- Serve the sauce right away, or chill it and use within one week.
