Ingredients
- 2 15 oz cans black beans, drained
- 2 chipotle peppers in adobo sauce
- 1 small sweet onion, divided
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- 2 cups chicken or vegetable broth
- 12 corn tortillas
- 1/4 bunch cilantro
- 4 oz cheese
Directions
- Make the sauce by adding the drained black beans, chipotle peppers, about 1 Tbsp of the adobo sauce, 1/4 of the sweet onion, diced, the cumin, and the garlic to a blender or food processor. Begin with 1 cup of broth, then blend in more as needed until the mixture becomes smooth and thick. Taste the sauce and add salt if it needs it, depending on how salty your broth is.
- Preheat the oven to 350ºF. Warm the tortillas however you like best: microwave the stack for 30 seconds, toast them in a skillet, or set them briefly over a gas burner until they pick up a little color. Wrap the warm stack in foil so the tortillas stay steamy and pliable.
- Dice the remaining sweet onion finely. Chop the cilantro leaves roughly, then mix them with the onion and a pinch of salt. Put this mixture aside so the flavors can settle together.
- Spoon a little of the black bean sauce into a casserole dish and spread it over the base. Add more sauce to a wide, shallow bowl or dish so you can dip the tortillas easily.
- Working with 1 tortilla at a time, coat it on both sides in the black bean sauce. Add a small sprinkle of cheese and a small amount of the onion cilantro mixture over half of the tortilla, fold it over, then fold it in half again to form a triangle. Transfer each filled and folded tortilla to the prepared casserole dish. Use only a very small bit of filling inside each one so they fold neatly; the rest will go on top after baking.
- When all the tortillas have been dipped, filled, folded, and arranged in the dish, spoon any leftover black bean sauce over them. Bake in the preheated oven for about 15 minutes, just until everything is hot. After baking, finish with the remaining cheese and onion cilantro mixture, then serve.
