Ingredients
- For the crust:
- 1 recipe Easy Pie Crust
- 3 tablespoons whole milk
- For the filling:
- 3/4 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup light brown sugar
- 1/2 cup dark brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 1/2 cups heavy cream
- 1 1/2 cups half and half
- 2 teaspoons vanilla extract
Directions
- Set an oven rack in the middle and heat the oven to 375 degrees F. Roll out the crust; for a 9-inch pan, aim for a bottom round about 11 inches across. Fit it into the pie pan or dish, shape the edge into a flute, and lightly coat the pie shell with milk. Chill the crust in the refrigerator while you make the filling.
- In a large bowl, combine the flour, sugars, cinnamon, nutmeg and salt. Add the heavy cream, half and half, and vanilla, stirring until the mixture is evenly blended. Pour the filling into the chilled pie shell, then bake for 35 to 45 minutes, until the crust has turned golden brown and the middle is set. If you like, sprinkle more cinnamon over the top. Cool the pie for about 15 to 20 minutes before you cut it.
