Freezer Friendly Sweet Potato and Turkey Chorizo Breakfast Burritos

Ingredients

  • 2 tablespoons olive oil
  • 1/2 pound ground turkey
  • 1/2 pound chorizo sausage, casings removed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked sweet potatoes, mashed or cubed
  • Salt and pepper to taste
  • 8 large flour tortillas
  • 1 cup shredded cheese of your choice
  • Optional toppings: salsa, sour cream, guacamole

Directions

  1. Preheat the oven to 350 degrees F.
  2. Warm the olive oil in a large skillet set over medium-high heat. Stir in the garlic, onion, chorizo sausage and ground turkey, then cook until the meat is fully cooked and nicely browned, about 10 minutes.
  3. Add the sweet potatoes to the skillet, then season with salt and pepper to taste. Continue cooking for another 5 minutes, until the sweet potatoes are warmed all the way through.
  4. Spoon a generous amount of the filling onto each tortilla, then add the toppings you want, including salsa, sour cream, guacamole and cheese. Fold each one into a snug burrito and arrange them on a baking sheet covered with parchment paper or aluminum foil.
  5. Bake for 15 minutes, until the burritos are hot inside and browned on the outside. Serve them warm, or freeze them to enjoy later.
