Ingredients
- 1 1/2 lbs fresh peaches
- 1 tablespoon butter
- 1 tablespoon finely minced shallots
- 1 tablespoon minced fresh ginger
- 1 medium clove garlic, finely minced
- 3 tablespoons dark brown sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon yellow mustard powder
- 1 tablespoon bourbon
- Kosher salt to taste
Directions
- Set a medium saucepan of water over high heat and bring it to a boil. Lower the peaches into the bubbling water and blanch them for 1 minute. Lift them out and let them rest until you can handle them comfortably, then peel them, remove the pits, and roughly chop the fruit. Toss the peels and pits.
- In a medium saucepan set over medium heat, melt the butter. Once the foam settles down, add the shallots and cook for about 5 minutes, stirring often, until they soften and begin to take on a little color. Stir in the ginger and garlic, and cook for about 30 seconds, just until the kitchen starts to smell very good.
- Add the chopped peaches, brown sugar, cinnamon, and mustard powder. Keep cooking for 10 to 15 minutes, until the fruit softens and gives up its juices. Pour in the bourbon, stir, and cook for 1 minute more. Add salt to taste, then serve.
