Ingredients
- 1 lb brussels sprouts, rinsed and dried, ends trimmed, sliced in half lengthwise
- 2 – 3 cloves garlic, minced
- 2 Tbsp extra virgin olive oil
- 2 tsp fresh lemon juice, plus more for serving
- 1/2 tsp fine sea salt, or to taste
- 1/4 tsp freshly ground black pepper
- 1/4 cup freshly grated parmesan cheese
Directions
- Heat the oven to 400 degrees. Put the brussels sprouts and garlic in a large mixing bowl, add the olive oil and lemon juice, and toss everything together. Season with salt and pepper, then toss again.
- Arrange the sprouts on a cookie sheet in a single, even layer. Roast in the heated oven, stirring once midway through, until the edges are golden brown, about 25 – 30 minutes.
- Serve warm, with an extra spritz of lemon juice if you like, and finish with the parmesan cheese.
