Ingredients
- 1 Tbsp olive oil
- 1 clove garlic, minced
- 6 cups torn kale leaves
- 1 large pizza dough
- 1/4 tsp garlic powder
- 1 cup whole milk ricotta
- 1 cup shredded mozzarella
Directions
- Heat your oven to 400ºF. If the kale is still attached to the stems, strip off the leaves and rip them into 2-inch pieces. Wash the kale thoroughly in a colander.
- Add the minced garlic and olive oil to a large pot, then cook over medium heat for about 1 minute, until the garlic smells fragrant and has softened. Stir in the kale and cook for about 5 minutes more, until it wilts down. Add a pinch of salt.
- Pull and shape the pizza dough into a 12-14" round, then set it on your pizza pan. Stir together the olive oil and garlic powder in a small dish, and brush that mixture over the dough. Spread the sautéed kale across the pizza, add spoonfuls of ricotta, and finish with the shredded mozzarella.
- Bake for 15-20 minutes, until the crust is browned, the cheese has melted, and the edges of the cheese are starting to color. Cut the pizza into 8 pieces and serve.
