Ingredients
- 1 cup dark brown sugar
- 1 teaspoon baking soda
- 1 cup smooth or creamy peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
Directions
- Heat the oven to 350 degrees F. Line 2 rimmed baking sheets with parchment paper. In a small bowl, use your fingers to work the dark brown sugar and baking soda together. Add the peanut butter, egg, and vanilla extract, then mix with a wooden spoon until the batter is smooth and thick.
- Scoop rounded tablespoons of dough onto the prepared baking sheet. These cookies spread as they bake, so leave about 2 inches between them. Gently press the top of each cookie with the tines of a fork, making a crosshatch pattern.
- Bake until the cookies rise and then settle back down, about 10 minutes. They should look lightly golden brown.
- Leave the cookies on the pan to cool for 10 minutes. Then move them to a wire rack and cool completely. Continue the same way with the remaining dough. Store the cookies in an airtight container on the counter for up to 4 days.
