Ingredients
- 4 cups rolled old fashioned oats
- 1 cup sliced or slivered almonds
- 1/2 cup packed light-brown sugar
- 1/4 cup honey
- 2 Tbsp water
- 1 1/4 tsp ground cinnamon
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/4 tsp baking soda
Directions
- Heat the oven to 300 degrees. Add the oats and sliced almonds to a large mixing bowl, toss them together, and put the bowl aside.
- In a medium saucepan, stir together the brown sugar, honey, water, cinnamon, and salt. Set it over the heat and bring it to a boil, stirring often. When it starts boiling, keep it there for 1 minute, whisking the whole time.
- Take the pan off the heat, add the vanilla and baking soda, and whisk until the mixture bubbles up and looks foamy. Pour the hot sugar mixture carefully over the oats and almonds, then toss until everything is coated.
- Spread the granola out in an even layer on a rimmed 18 by 13-inch baking sheet lined with a silicone baking mat or parchment paper.
- Bake until the granola is lightly golden brown, about 36 – 40 minutes, taking it out and tossing it twice as it bakes.
- Take the pan out of the oven and let the granola cool all the way, then break it into clusters. It will not be crisp until it has cooled. Store in an airtight container.
