Ingredients
- 2 cups green tomatoes, diced
- 1/2 cup apple cider vinegar
- 1/4 cup brown sugar
- 2 tablespoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground mustard
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
Directions
- Set a medium Dutch oven, or another sturdy pot, over medium heat and warm the oil. Stir in the onion and garlic, then cook them, stirring often, until they soften and start to take on a little color, 5 minutes.
- Add the tomatoes, jalapeño, and green chiles to the pot. Cook, stirring now and then, until the tomatoes begin to soften and cook down, about 4 minutes. Scoop the mixture out of the pot and set it aside.
- Pour in the vinegar, whisk in the mustard, add the sugar, then stir in the Worcestershire, agave, soy sauce, and tomato paste. Add black pepper and salt, followed by the pepper flakes, the chile powder, the cumin, and the zest. Raise the heat to medium-high and bring the mixture to a boil, stirring occasionally.
- When it reaches a boil, turn off the heat and add the tomato mixture back to the pot. Let it sit for 30 minutes so the flavors can come together. Transfer the sauce to an airtight container and refrigerate it for up to 2 weeks. Finish with the cilantro just before serving.
